Multiple sclerosis (MS) is a chronic demyelinating disease of the Central Nervous System (CNS), a probable autoimmune base mediated by activated T lymphocytes against different myelin-oligodendrocyte complex antigens that, after penetrating the CNS, induce a cascade of immunological phenomena Which will lead to myelin injury. It would be encompassed within the demyelinating disorders, in which an inflammation and destruction of the myelin in the CNS takes place. Although the role of nutrition in MS is not yet clear, there are molecular bases by which dietary factors and lifestyles can exacerbate or ameliorate MS symptoms by controlling metabolic and inflammatory pathways in the cell. Therefore, to characterize the nutritional status and the quality of life of patients with Multiple Sclerosis.
