Chitosan is a natural biopolymer that is derived from chitin, a major component of crustacean outer skeletons . Chitosan is derived from partially deacetylated chitin and consists of copolymers of glucosamine and N-acetyl glucosamine. It has many amino groups attached on the polysaccharide main chain that are readily available for chemical reaction and salt formation with acids .
